I made up a Chicken Fried Rice Recipe on the fly, and it turned out super delicious. This was our dinner, and my fiance asked for seconds.... I would have eaten more too but then I'd be uncomfortably full. lol.
2. Add thawed Vegetables and cooked Rice. Stir well to combine.
3. Add Sesame Oil, and toss well. Add Pepper and extra Soy Sauce if desired. Stir well and cook until the rice soaks up the extra liquid.
4. Gently stir in Scrambled Egg and serve with a sprinkling of Toasted Sesame Seeds.
If you have the ingredients prepared beforehand, this dish is very fast and easy to make.
Easy Chicken Fried Rice
Serves 4-5
- 1 lb Boneless Chicken Breast (Cubed and Cooked)
- 1 cup Egg Beaters or 4 Eggs (Cooked and Scrambled)
- 3 cups Cooked Brown Rice (Day Old or 3 Minute Rice Cups)
- 1/4 Onion (Chopped)
- 1-2 lg bags Frozen Mixed Vegetables (Peas, Carrots, Corn, etc... Thawed)
- 1 lg Garlic Clove (Minced)
- 1/4 cup Soy Sauce
- 1 tbsp Sesame Oil
- Black Pepper + Soy Sauce (to taste)
- Toasted Sesame Seeds (Garnish)
