My fiance and I went to this restaurant that serves delicious breakfast foods, and I tried a Sweet Potato Omelete. It was amazing, and it made me wonder why I've never added sweet potato to my omeletes before. And for that matter, why haven't I ever made sweet potato homefries? I am going to try it, just you wait!
Anyway, I got the idea this morning to make a Sweet Potato Tamagoyaki, and a summery fruit salad for breakfast, so here is what I came up with.
I think it came out beautifully, and I just had to add a background to the picture to make it more pretty and special. I am sooo happy with how this tamagoyaki came out that I am even going to share my secret to how I prepared the sweet potato...
It's Frozen Sweet Potato Fries!!! That's right, I took Sweet Potato Fries from the freezer and tossed them in my frying pan with some non-stick spray. I cooked it just enough so that they were no-longer frozen and the outsides got slightly crisp. Then I removed them and prepared the egg beaters in the pan, I laid down a few large spinach leafs and laid out the sweet potato fries, then I wrapped them up in the egg and made Sweet Potato Tamagoyaki. It turned out beautifully, and it tasted even better. I will definitely be making this again. I loved it!
