Maypole Beltane Bento

Today is Beltane, also known as MayDay, and I made a special bento to celebrate. I made an edible Maypole sticking out of my oatmeal pancakes.

  • Flowers (Pineapple. Honeydew, Blackberries, Strawberry)
  • Oatmeal Pancakes (Gluten Free, Vegan, and No Sugar Added)
  • Maypole (GF Pretzel Stick, Strawberry Fruit Leather 'Ribbons')
  • Blueberries
To make the pancakes I used 1/3 Cup Gluten Free Pancake mix with milled flax seed. The mix does not have any sugar in it, and I didn't add any. I added 2 Tbsp Unsweetened Applesauce instead of sugar, eggs, and oil, and I used 1/4 Cup Unsweetened Almond Milk instead of milk. I also added about 2 Tbsp of Gluten Free Rolled Oats and 1 tsp of Ground Cinnamon. I mixed up the batter and cooked it in a pan using a non stick vegetable oil spray.
They were delicious and I didn't need any sugar at all because the applesauce and the cinnamon added sweetness and flavor. These were also high in fiber because of the flax and oats. YUM!
Here is another view of the Maypole. If only the fruit leather was a brighter color, it would have looked prettier and less monochromatic. Oh well, it tasted very yummy!

It was raining all day today, so I wasn't able to go out and dance around the maypole. Oh well, I have yummy food and I spent a little time with my fiance. :)
