Breakfast & Lunch bentos

I made myself a quick Breakfast Bento this morning. Basically the same thing I had the last time I made a breakfast bento.
  • Yoplait Strawberry Yogurt Light (6oz can for 100 calories)
  • Milled Flax Seed (1/2 tbsp for 15 calories)
  • Blueberries (20 berries for 15 calories)
  • Newman's Own Sweet Enough Cinnamon Fiber Flakes (1/2 cup for 60 calories)
  • Strawberry (3 calories)
All together it's 194 Calories and pretty yummy. I don't really like Strawberry Yogurt, but it was one of the only flavors we have left and my fiance hasn't been eating them.

Next comes our yummy lunches. I used leftovers from last night's dinner. I made a chicken casserole and Mashed cauliflower. The mashed cauliflower was soooooo delicious, and I couldn't stop eating it. Sooo good. I made the casserole with Boneless Chicken Breast, Broccoli, Cauliflower, Spinach, V8 Broccoli Soup, Cream of Mushrooms Soup, and Low Sodium Chicken Broth... as well as some spices and garlic.
It turned out really yummy, and I'm glad I saved some for today's lunch.
  • Mashed Cauliflower
  • Chicken Broccoli Casserole
  • Strawberry and Cantaloupe
  • Late July Peanut butter sandwich crackers and a Late July Sandwich cookie
  • Mini Babybel Light with heart cutout
My Fiance got the same thing as me, but a bit more.
Wish I had planned ahead a bit more before I started packing it. The yellow box and the bland colored food just look blah. Oh well.


  1. Mashed cauliflower sounds amazing! How did you make it?


  2. It's really easy to make, and tastes great. I took fresh cauliflower and cut it into florets. then I boiled the florets until they were tender. Drain the cauliflower and mash with a potato masher. I added some butter spread and used a hand mixer to make it smoother.
    You can also steam the cauliflower instead of boiling it.
    You can basically make it the same way you make mashed potatoes, but it has a lot less calories and more nutrition.

  3. Did you use the flax seed to make the star on the yogurt? Cute!

  4. Slovakiasteph, Yes I did. I usually sprinkle the flax seed right on top, but this time I wanted it to be a little prettier, so I used a cookie cutter to get the star shape.
