This is the Cat in the Hat Breakfast Bento. The Hat didn't come out as well as I hoped, but oh well, you can use your imagination. After all it is Dr. Seuss!
This pancake is made using a Gluten Free pancake mix. I usually do not use gf mixes because they are low in nutrition and fiber, but I make an exception for pancakes. These are made with a mix that has flaxseed in it and has a higher nutrition and fiber content then other mixes. I also punched up the mix using, Almond Milk, Mashed Banana, Applesauce, and Egg Beaters, instead of milk, sugar, oil, and eggs.
