Breakfast 4 Lunch Bento

I wanted scrambled eggs for lunch, so I decided to make a breakfast for lunch bento. It turned out really yummy, so I'm sharing it with you all to see.
I used my 3 tier tiffin bento set, but I only used 2 of the tiers this time. I separated the hot foods from the cold foods, and I really had to cram the fruit into the cold tier. lol oops.
  • 1/2 Grapefruit (With green sugar to make it festive)
  • Apple sections
  • Scrambled Eggs (Egg Beaters)
  • 2 Breakfast Sausage Links
  • Salsa (I used to put ketchup on my eggs, but Salsa has more benefits and more flavor, plus it adds some vegetables to the meal)
You can't tell I'm in dire need of a grocery store trip... lol. Luckily I'm shopping tomorrow, so we'll have some fresh food on hand, and I'll have some vegetables again!

  2. I do breakfast-for-lunch when I need to make a grocery run, too! Pancakes are a lifesaver at such times. What is it about breakfast food that makes us feel fine about not eating any veggies? I do love salsa with my eggs, but I usually wrap that in a tortilla--I'll have to remember that for next time I need to pack a lunch and have nothing appropriate on hand.

  3. I've done the breakfast burrito as well. I wrap the eggs and salsa in a tortilla I used to eat it with melted cheese as well (when I was a kid).
    I don't know why veggies aren't a breakfast food. I've noticed that, and I try to add some veggies here ant there. I always have veggies in my omelets... but I don't eat omelets every day. Why is is that a lot of breakfast foods are more like desserts? Like pastries, pop tarts, sugary cereal, etc.
