Sausage Fried Rice Bento

This is a very lazy bento...
Why is it lazy you ask? Well because I just took what I made for dinner and plopped it into a bento box and took a picture, that's why.
That's right, I felt like making a bento, but I was short on time and energy so I took the Sausage Fried Rice I made for dinner and put it into a piggy bento box, and I added a Piggy Cheesy Bread to make it cuter (and because they are tasty).
 Aww, Look at those piggies! I just love them so much!
Here's the Fried Rice I made for dinner.
  • Brown Rice
  • Scrambled Egg (I used Egg Beaters)
  • Mixed Vegetables (Peas, Corn, Lima Beans, Carrots, Green Beans)
  • Chicken Sausage (Spinach + Red Onion)
  • Green Onion
  • Garlic, Black Pepper, GF low sodium Soy Sauce, Sesame Oil

Garden Vegetable Piggy Bento

That's right everybody, Another Piggy Bento...
I made this last night, but it was right before I had to go to work, so I didn't get to blog about it until now. I made my fiance and Mother-In-Law steak for dinner, and since I don't eat red meat I decided to make myself a cute little bento using one of the Garden Lites I won. And since I have been in the 'Pig' mood, I decided to turn said Garden Lite souffle into a pig face. :)
 It looks like my Garden Lites pig is checking out my Bento Box Pig... How cute!
 Oink Oink:
  • Garden Salad (Lettuce, Carrots, Broccoli Slaw, Cucumber, Tomato) [unpictured Light Italian Dressing]
  • Garden Lites Pig (Zucchini Garden Lites Souffle with/ Cucumber, Tomato, and Almond details)
 Here is a close up of my piggy face. I think it turned out really good. :)
And the salad that was really packed in there. It was too big to eat out of the bento box without making a mess so I ended up dumping it into a bowl to eat.

Piggy Sandwich Bento

I have been on a real Piggy kick lately. I just want to make tons of cute little piggies! Maybe my inner child is coming out since I was obsessed with pigs when I was younger...
Anyway, this bento has yet another piggy face in the form of a sandwich.
 And of course I packed it in one of my piggy face bento boxes! Aren't they cute together?
 Here's What's Inside:
  • Piggy Sandwich (Udi's GF Fiber/Flax bread toasted, Tofutti 'Cream Cheese' mixed with Red Raspberry All Fruit spread w/ fiber. Blueberries cut in half for eyes, and sunflower seeds for nostrils) 
  • 1 oz Nut-rition Heart Healthy Mix (Almonds, Pistachios, Walnuts, Hazelnuts, Peanuts, Pecans)
  • 1 Med Orange (Sliced)
  • 10 Blueberries
  • 2 Cherries
 I lightly toasted the bread and used a glass to cut out a circle in one slice. In a small bowl I mixed the Tofutti vegan cream cheese and raspberry All fruit spread (no added sugar). I spread the mix on the slice of bread and added the crust of the other bread on top. I added some more spread for the ears, and I took part of the circle cut out and cut a snout from it. I sliced 2 smaller blueberries in half to use as the eyes, and added sunflower seeds as the nostrils. Oink Oink!
I sliced the Orange, and alternated the slices to create a wave effect. I added the blueberries to the open spots and 2 cherries on top of them. YUM!

Triple Blueberry Pancakes

These Pancakes have Three Times the amount of Regular Blueberry Pancakes.
How could you resist that?
 Plus they are Gluten Free and Vegan and can be made regular as well. Let the Blueberry Lovers rejoice!
First I took about 1/4 Cup of Frozen Wild Blueberries (Unsweetened) and I microwaved them for about 30 seconds to thaw.
I added the wild blueberries (with their juice) to 1/3 cup Gluten Free Pancake Mix and 1/3 cup unsweetened applesauce in a bowl...
and I mixed it together with a few Tbsp of Almond Milk until the batter was the consistency I wanted. I love the color, but if that bother's you, then I suggest not adding the blueberry juice from the first step. It'll have much less of a blueberry flavor though.
 I sprayed a pan with nonstick spray and plopped down a spoonful of batter. As the batter cooked on one side, I added a few blueberries and gently pressed them into the uncooked side of the pancake.
 Here is the other side of the pancake. You can see a blueberry peaking through! :)
 Here is the finished pancake resting on a paper towl while I cook the other three pancakes. This recipe makes about 4 pancakes (one serving).
 Here is my plateful of pancakes ready for the third addition of blueberries.
 Here it is topped with Fresh Blueberries. See? It's Triple Blueberry Pancakes. Wild Blueberries and their juice in the batter. Blueberries added while cooking, and fresh blueberries on top.
Now you can top it with whatever you like. Blueberry Syrup might be nice, or regular maple syrup.
Powdered Sugar and Butter would be delicious as well.
But I topped mine with...
 Whipped Cream! Fat Free Whipped Cream to be exact.
Now they are nolonger vegan, but you could use vegan whipped cream if you'd like. Or Maple Syrup, or Blueberry Jam... whatever you desire.
 YUM,The first bite with a little bit of everything in it.
MMMM, I love the way blueberries pop and the juice leaks out when they have been cooked. It definitely adds another dimension to the pancakes, and it adds a yummy sauce to the plate. I mixed the whipped cream with the blueberry juice and used my pancakes to sop it up. Yummy!

Pig Lovers Bentos

These Bentos are for all the Pig Lovers out there.
Pigs have been my favorite animal (or one of my favorite animals) for my entire life. I had a pig obsession when I was younger, and my room was filled with everything pig (stuffed pigs, pig nicknacks, pig pictures, pig books, etc.).
Well recently my mom gave me a bottle of Pig Sprinkles, and I just knew I wanted to make a bento using them. So today when I was making Cheese Bread I decided to make Piggy Cheesy Bread and make a pig themed bento using some of my piggy bento boxes.
Here's my Fiance's Bento first.
 So Cute!!!!
Here's whats inside:
  • Piggy Cheesy Bread (w/ Nori accents)
  • Sweet Potato Tamagoyaki (w/ Spinach)
  • Apple 'Wings'
  • Vanilla Greek Yogurt (w/ Pig Apple + Pig Sprinkles)
  • Grapes (w/ Pig food pick)
 Here's a close up of the Piggy Bread. This was my first time using nori, and I didn't have any nori punches so I had to cut small pieces with scissors, and then I had a hard time getting it to stay in place. I will have to practice.
And here is a close up of the piggy yogurt. The sprinkles are the same shape as my piggy food cutter, so it tied in the sprinkles and the apple pig well.

Next up is My bento. I had snacked on a piggy bread already, and I ate some apple and the ends of the tamagoyaki while I was cooking so I didn't want to make myself a huge bento.
 Aww, I just love the piggy breads!
  • Apple (w/ Pig cut out, filled w/ Vanilla Greek Yogurt + Pig Sprinkles)
  • Grapes (w/ Pig food pick)
  • Sweet Potato Tamagoyaki (w/ Spinach)
  • Piggy Cheesy Bread (w/ Nori accents)
 It looks like a lot of grapes, but it was really only 1/4 of a cup. They were small grapes and I used them to help fill in the spaces of the bento.
 So Cute! I can't wait to make more of this delicious bread. And now that I know it makes cute pig faces, I can make these again.
And here is the bottle of Pig Sprinkles my mom gave me. Isn't that cool?

Piggy Cheesy Breads

I have had this box of Cheese Bread mix in the pantry for a while, and today I was decided to try it out. As I grabbed the box I remembered I had Pig Sprinkles I wanted to use in a bento, so I decided to go with a pig theme and I started making Piggy Cheesy Breads.
 Aren't they cute? I just love these little Piggy faces! :)
 Here is the box of Cheese Bread mix. My mom gave it to me when I had to go Gluten Free, and for some reason I haven't made i until now. Let me tell you, I have been missing out!
The instructions were super easy. Pour mix into a bowl, stir in 1/2 cup water and 2 eggs (I used 1/2 cup egg beaters to make it a bit healthier)... Then work the dough until it's ready.
 I formed it into a ball to show you. The next thing you need to do is form the dough into even balls (I made 12 pig faces), then bake for 25 minutes or until golden in color.
 Cute little piggy faces! I formed balls for the heads, then used smaller pieces of dough to form little balls for the snouts and triangles for the ears.
 Here they are ready for the oven. Bake for 25 minutes in a 350 degree preheated oven.
 This is another piggy head waiting to be baked.
 And here they are out of the oven. It smelled sooooooo good. I couldn't wait to try one!

 Aww, This one came out really good.
 I bit into this delicious smelling bread not knowing what to expect. The outside had a nice crust on it while the inside was gooey like it was filled with melted cheese! OMGS! It was amazing!
I tried to get a good picture of the inside, but my camera sucks, so this was the best I could do. Gooey, Cheesy, Goodness. And this is coming from someone who doesn't care for cheese most of the time.

I am going to look for this amazing bread mix and buy some. I have plans for this bread. Oh yes I do! lol

Protein & Beans Bento

I exercised a lot today, so I wanted to make sure I ate a good amount of protein so my body could recover. So I was about to make myself a leftover Chicken Burger, when my mother in law offered me some of the bean salad she made. I was going to turn it down at first because I usually don't like that kind of salad, but it sounded good, and it was packed with protein so I decided to have some and put it into a bento.
This is what I came up with:
  • Burger Kabobs (Alternating pieces of Chicken Burger and Cherry Tomato)
  • Grapes (I had just washed them, so they were on the counter taunting me. lol)
  • Whole Grain Mustard (To did my kabobs into)
  • Bean Salad (Green Beans, Wax Beans, Chick Peas, Black Eyed Peas, Black Beans, Red Kidney Beans, Chopped Red Onion, Light Vinaigrette Dressing)
I added this picture because I think it's cool how direct sunlight can change everything about a picture by making some of the colors pop. It also adds more depth to the photo, but I used the other picture first because it is easier to see what everything is because it has a more even tone.
