Okonomiyaki Bento

Okonomiyaki (o-konomi-yaki) is a Japanese savory pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning "what you like" or "what you want", and yaki meaning "grilled" or "cooked". The batter is made of flour, grated yam, water or dashi, eggs and shredded cabbage, and usually contains other ingredients such as green onion, meat (generally pork or bacon), octopus, squid, shrimp, vegetables, kimchi, or cheese. Okonomiyaki is sometimes compared to an omelet or a pancake and may be referred to as "a Japanese pancake" or even "Osaka soul food".

I made my version of an Okonomiyaki for my bento today. In it I had grated potato, coleslaw mix (shredded cabbage, carrots and red cabbage), egg beaters, GF pancake mix, and black pepper. Then I served it with Ketchup (because I do not like Mayo, but I always see these served with Mayo on top).
In this picture you can see some of the the purple cabbage and the orange carrots, unfortunately you can't see the green cabbage. It was really very colorful. I should have taken a picture before I cooked it so you could see all the different colors. I also traded in the little plastic fork (that was in the first picture) for a real fork and knife because this needed to be cut to be eaten.
