Since my Peaches n' Cream Oatmeal went over so well, I thought I would make a Berries n' Cream Oatmeal as well. Although it is no-longer berry season, I think this recipe works better with frozen berries rather then fresh because there is a lot of flavor to be had, and you can get frozen berries year round.

Berries n' Cream Oatmeal

Berries n' Cream Oatmeal
- 1/4 Cup Gluten Free Rolled Oats (I used Bob's Red Mill GF Oats)
- 3/4 Cup Water
- up to 1 Cup Thawed Frozen Berries (you can use whatever kind you like, I used a mix of sliced Strawberries and Wild Blueberries)
- 1 Packet Stevia (or sweetener of choice)
- 1/4 Tsp Vanilla Extract
- 2-3 Tsp Sugar Free Vanilla Pudding Mix (optional if you can't find a Vegan variety)
- 1/4 Cup Unsweetened Almond Milk (or milk of choice)
- Cinnamon (optional)
- In a medium saucepan bring water to a boil.
- Add vanilla, cinnamon, stevia, and pudding mix to water and stir.
- Add oatmeal and let thicken, stirring occationally.
- When oatmeal has reached desired consistancy add the berries and stir until warmed.
- Spoon oatmeal into a bowl and top with almond milk before serving.
